Healthy Habits – Roast chicken breasts with garbanzo beans

Today we have a ridiculously simple, yet super delicious recipe:  Roast chicken breasts with garbanzo beans, tomatoes, and paprika

¼ cup extra-virgin olive oil

4 garlic cloves, pressed

1 tablespoon smoked paprika

1 teaspoon ground cumin

½ teaspoon dried crushed red pepper

½ cup plain yogurt or Greek yogurt

4 chicken breast halves

1 15oz can garbanzo beans, drained

1 12 oz container cherry tomatoes

1 cup chopped fresh cilantro, divided

Preheat oven to 450.  Mix first 5 ingredients in medium bowl.  Pour 1 teaspoon of the spiced oil mixture into a small bowl; whisk in yogurt and set aside for sauce.  Place chicken on a large rimmed baking sheet.  Rub 2 tablespoons of the spiced oil mixture over the chicken.  Add beans, tomatoes, and ½ cup cilantro to remaining spiced oil mixture and toss to coat.  Pour bean mixture around chicken.  Sprinkle everything generously with salt and pepper.

Roast until chicken is cooked through, about 20 minutes (depending on the size of the breasts).  Sprinkle with ½ cup cilantro.  Transfer chicken to plates, spoon bean mixture over.  Serve with yogurt sauce.

Want a little extra flavor without adding a lot of extra fat and calories?  Hit the roasted beans and tomatoes with a sprinkle of a strong cheese like Feta.  Not a huge chicken fan (like me)? The roasted veggies go great as a side with pretty much anything, or just eat them as the main course!

Got leftovers?  Slice up the chicken the next day and stuff it in a pita with the bean mixture and yogurt sauce for a tasty sammich!

*fun fact*  Garbanzo beans (or chickpeas) are high in protein and one of the earliest cultivated vegetables; 7,500-year-old remains have been found in the Middle East.
